Amla ka Achar ek swadisht aur poshak bharpoor traditional Indian pickle hai, jo taste ke saath-saath sehat ka bhi khazana mana jata hai. Taza aur achhi quality ke amla (Indian gooseberry) ko dhokar, ubal ya steam karke unke tukdon mein kaata jata hai, phir unhein desi masalon ke saath mustard oil mein milaya jata hai. Is achar ka swaad khatta, halka teekha aur thoda sa kadwapan liye hota hai, jo dheere-dheere bahut hi lajawab flavour mein badal jata hai.
Amla ka Achar banane mein rai (mustard seeds), saunf (fennel), methi dana (fenugreek), haldi, lal mirch aur hing jaise masalon ka istemal hota hai. Mustard oil is achar ko ek rich aroma deta hai aur amla ke natural taste ko aur enhance karta hai. Kuch dinon tak dhup ya room temperature par rakhne ke baad, ye achar poori tarah se masalon ko absorb kar leta hai aur iska swaad aur bhi gehra ho jata hai.
Ye achar sirf taste mein hi nahi, balki health ke liye bhi bahut faydemand hota hai. Amla Vitamin C se bharpoor hota hai, jo immunity ko strong banane, digestion sudharne aur baalon aur skin ke liye bhi achha mana jata hai. Roz thodi si matra mein Amla ka Achar khane se bhookh bhi achhi lagti hai aur khana aur bhi tasty ho jata hai.
Amla ka Achar roti, paratha, dal-chawal, khichdi ya simple dahi-chawal ke saath bhi perfect lagta hai. Ye un logon ke liye ideal hai jo traditional desi swaad ke saath sehat ka bhi dhyaan rakhna chahte hain.
